Bottle Gourd Halwa, also known as Lauki ka Halwa, is a cherished North Indian dessert celebrated for its creamy texture and delicate sweetness. Traditionally prepared during festivals like Navratri and Holi, this halwa brings together the subtle flavors of grated lauki (bottle gourd), low-fat milk, minimal ghee, and a touch of cardamom. Its light green hue and aromatic notes make it a feast for both the eyes and palate. Originating from the North Indian states such as Uttar Pradesh and Punjab, Bottle Gourd Halwa is often served as a delightful finish to festive meals or as a comforting winter treat. Unlike heavier desserts, the halwa stands out for its use of a humble, hydrating vegetable that is locally available throughout the year. The dish is not only delicious but also simple to prepare, making it a popular choice for home cooks looking for a quick yet authentic Indian sweet. Loved by all age groups, this healthy dessert is especially favored during vrat (fasting) days and family celebrations. Its natural sweetness, creamy consistency, and the delicate crunch of dry fruits embody the festive spirit of Indian cuisine, making it a timeless classic that never goes out of style.

  • 2 tbsp Skimmed milk powder (optional, for creaminess) - optional
  • A few Saffron strands (kesar, soaked in 1 tbsp warm milk) - optional

Instructions

  1. 1

Peel and grate the bottle gourd. Squeeze out excess water gently with your hands.

    5 minutes

Use fresh, tender lauki for best results.

  2. 2

Heat ghee in a heavy-bottomed kadhai on medium flame. Add chopped cashews and almonds, sauté till golden, then set aside.

    3 minutes

Do not burn the dry fruits—light roasting enhances flavor.

  3. 3

Add grated lauki to the same kadhai. Sauté for 4-5 minutes until the raw smell disappears and it softens.

    5 minutes

    Keep stirring to prevent sticking.

  4. 4

Pour in low-fat milk and cook on medium flame. Stir often and cook till milk is absorbed (about 7 minutes).

    7 minutes

Scrape sides to mix the thickened milk back into the halwa.
